Slow-Cooked Silverside
Silverside is one of those wonderfully underrated cuts of beef. With a little time and slow cooking, it becomes beautifully tender, flavoursome and comforting—proof that simple ingredients can create something truly special.
Made with organic ingredients and gently cooked for nine hours, this wholesome farmhouse favourite is perfect for feeding the family, with plenty of delicious possibilities for any leftovers.
Ingredients
Approximately 1.5 kg organic corned silverside
1 tablespoon organic apple cider vinegar
1 tablespoon organic peppercorns
1 organic brown onion, roughly chopped
2 organic carrots, roughly chopped
1 tablespoon organic rapadura sugar, optional
Water, as needed

Method
- Place the silverside into the slow cooker.
- Add the apple cider vinegar, peppercorns, onion, carrots and rapadura sugar, if using.
- Pour in enough water to cover the silverside.
- Cover and cook on high for 4 hours, then reduce the slow cooker to low for a further 4–5 hours. We find that around nine hours gives the most beautifully tender result.
- Once cooked, carefully remove the silverside from the slow cooker and allow it to rest for 10 minutes before slicing. For the most tender slices, always cut across the grain.
To Serve
Serve warm slices of silverside with steamed organic broccoli, creamy homemade béchamel sauce and golden, crunchy roasted potatoes.

Leftover silverside is almost as good as the main meal. Use it to make old-fashioned corned beef fritters, add it to a hearty breakfast hash or layer thin slices into a classic Reuben sandwich with sauerkraut, Swiss cheese and a tangy dressing.
